How to use fresh Wasabi japonica

For use as a special flavouring ingredient at the table, the root (rhizome) of the fresh wasabi is freshly grated with the aid of a very fine grater.

1. Wash the wasabi under cold running water. Any black areas that are due to oxidation can easily be removed from the surface. Please don't remove the entire outer skin because this is where you'll find the elements that provide its unique flavour.

2. Cut the wasabi.

3. Hold the wasabi grater at an angle of 90 degrees and – in accordance with the amount you require – grate it by making circular movements.

4. Enjoy the grated wasabi! Freshly grated wasabi develops its optimal aroma after roughly 3-5 minutes.

If you'd like it to be even hotter, simply dip the top of the wasabi in sugar before you grate it!

How to store fresh Wasabi japonica

If stored correctly, wasabi will keep for up to one month in the refrigerator. The sooner the wasabi is consumed, the fresher the aroma will be.

The wasabi will keep for up to 8 weeks if it's frozen. However, its flavour changes, so we recommend storing it in the refrigerator. If you should nevertheless want to freeze the wasabi, we recommend grating it while frozen when you eventually come to use it.

If you store it in the refrigerator, all you need to do is put it in a jar and cover it with water up to the stalk.

Alternatively, you can wrap the wasabi in a damp cloth. Irrespective of whether the wasabi is kept in a jar or wrapped in a damp cloth, it's essential to store it at fridge temperature.

If the wasabi has already been cut, it's better to store it in a damp cloth rather than a jar of water.
